Coleslaw, Four Ways and Quickly

We all know what a struggle it is to plan meals, even for one person like I do it.  It has to be fairly quick to prepare, nutritious, not break the bank, and, in my case, easy on the fat and calorie content.  I found these four cole slaw variations that totally fit each requirement.

Start with one 16-oz bag of coleslaw blend (14-oz bags will do as well).

Then--go for it!

1 C classic Caesar dressing
1/2 C grape tomatoes, halved

4 slices bacon, cooked, drained and crumbled
1/2 C ranch dressing

1/4 C chopped cocktail peanuts
1/2 C Asian toasted sesame dressing

1 small red pepper, cut into short, thin strips
1/2 C Tuscan-style Italian dressing

For all variations:  mix ingredients; refrigerate until ready to serve.

Of course, I expect you all to be creative and add ingredients that you think would enhance the flavor of each recipe.  The grape tomatoes in the Ranch-Style Coleslaw, for instance, would approach a BLT flavor.  Or, use the bagged broccoli slaw instead of the traditional coleslaw blend.  Yum!

I have tried the Creamy Caesar Coleslaw, which is very yummy.  Really looking forward to trying the other three, especially the Asian-Style Coleslaw.
